Spinach Galette

A delightful and tasty spinach galette that combines a crispy crust, cheese, and delicious vegetables. Perfect for a quick meal or snack! Preparation Time: 45 minutes
Serving Size: 4 servings
Ingredients:
- 2.5 dl all-purpose flour - 0.5 dl rye flour
- 100 g butter
- 50 g grated Parmesan cheese
- 2 tbsp cold water
- 140 g fresh spinach
- 1 small onion
- 1 garlic clove
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- 100 g mozzarella cheese
- 0.25 dl pine nuts
- 0.5 dl fresh basil leaves
- 1 egg
Instructions:
1. In a bowl, mix the all-purpose flour, rye flour, and grated Parmesan cheese together. 2. Cut in the cold butter until the mixture resembles coarse crumbs.
3. Add the cold water and knead the dough until smooth. Refrigerate for about 30 minutes.
4. Rinse and drain the spinach leaves. Peel and finely chop the onion and garlic.
5. Sauté the onion and garlic in olive oil in a skillet, seasoning with salt and black pepper.
6. Add the spinach to the skillet and stir until the leaves wilt.
7. Roll out the chilled dough on parchment paper into a circle about 30 cm in diameter.
8. Spread the spinach-onion mixture in the center of the dough, leaving about a 4 cm border.
9. Tear the mozzarella and layer it over the filling, then fold the edges of the dough over the filling.
10. Sprinkle the pine nuts on top and brush the edges with beaten egg.
11. Transfer the galette on the parchment paper to a baking sheet and bake in a preheated oven at 200°C (400°F) for 20-25 minutes, until the cheese is melted and the edges are golden.
12. Garnish the finished galette with fresh basil leaves before serving.
