Ingredients:
- 200 g all-purpose flour
- 100 g cold butter
- 1 tbsp sugar
- 1/4 tsp salt
- 4-5 tbsp cold water
- 300 g cultivated blueberries
- 100 g wild blueberries
- 2 tbsp sugar (for the berries)
- 1 tbsp cornstarch
- 1 tsp vanilla extract
- 1 egg (for egg wash)
Instructions:
1. Prepare the dough: In a bowl, mix together the flour, sugar, and salt. Add the cold butter in cubes and rub it into the mixture until crumbly. Gradually add cold water until a dough forms. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
2. Prepare the berry filling: In a large bowl, combine the cultivated blueberries, wild blueberries, sugar, cornstarch, and vanilla extract. Let the mixture sit to marinate for a while.
3. Preheat the oven to 200°C (392°F).
4. Roll out the dough on a floured surface into a round shape, about 30 cm in diameter. Transfer the dough to a parchment-lined baking sheet.
5. Spread the berry mixture in the center of the dough, leaving about a 5 cm border. Fold the edges of the dough over the berries to form a rustic galette.
6. Brush the edges of the dough with the beaten egg and bake the galette in the oven for about 25-30 minutes, until golden brown.
7. Allow the galette to cool slightly before serving. Enjoy it on its own or with vanilla ice cream.
