Ingredients:
- 1 store-bought pie crust - 6 fresh figs
- 150 g blue cheese (such as Roquefort or Gorgonzola)
- 1 tbsp honey
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (such as thyme or basil) for garnish
Instructions:
1. Preheat the oven to 200°C (400°F). 2. Roll out the pie crust into a thin circle and transfer it to a baking sheet lined with parchment paper.
3. Slice the fresh figs and arrange them in the center of the crust, leaving about 5 cm (2 inches) of space around the edges.
4. Crumble the blue cheese over the figs.
5. Drizzle honey and olive oil over the filling. Season with salt and pepper.
6. Fold the edges of the crust over the figs to form a galette.
7. Bake in the oven for about 25-30 minutes or until the edges of the crust are golden brown.
8. Allow the galette to cool slightly before serving and garnish with fresh herbs.
