A delicious and festive almond cookie perfect for the holiday season.

Ingredients:
- 250 g almond flour
- 100 g coconut sugar
- 1 tbsp chia seeds
- 3 tbsp water
- 2 tbsp maple syrup
- 1 tbsp cinnamon
- A pinch of vanilla powder
Instructions:
1. In a bowl, mix the chia seeds and water. Allow the mixture to sit for about 10 minutes to thicken.
2. Add the swollen chia seeds to the bowl with almond flour, coconut sugar, maple syrup, cinnamon, and vanilla powder.
3. Mix all the ingredients well until a smooth dough forms.
4. Shape the dough into small cookies and place them on a baking sheet lined with parchment paper.
5. Bake the cookies at 175°C (350°F) for about 10-15 minutes, or until they turn a nice golden color.
6. Allow the cookies to cool before serving.
