A delicious and hearty chicken dish inspired by the vibrant atmosphere of Piccu Maccia restaurant, perfect for a satisfying lunch.

Ingredients:

- 400 g chicken fillets
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 g spinach
- 200 ml cream
- 100 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish

Instructions:

1. Heat the olive oil in a large skillet over medium heat.
2. Add the chopped onion and crushed garlic, sauté for about 2-3 minutes until softened.
3. Add the chicken fillets and cook until golden brown and cooked through, about 10-12 minutes.
4. Stir in the diced bell pepper and halved cherry tomatoes, cooking for another 5 minutes.
5. Add the spinach and cream, mixing well and letting it simmer for a few minutes.
6. Season with salt and pepper. Stir in the grated Parmesan cheese until melted and combined.
7. Serve garnished with fresh basil.
