Ingredients:
- 2 tsp olive oil
- 250 g mixed stir-fry vegetables (such as bell peppers, broccoli, and carrots)
- 200 g smoked trout fillet
- 2-3 sun-dried tomatoes
- Salt and pepper to taste
Instructions:
1. Heat olive oil in a wok over medium heat.
2. Add the mixed stir-fry vegetables to the pan and sauté for about 5-7 minutes until they are tender but still crisp.
3. Cut the smoked trout fillet into bite-sized pieces and add them to the pan with the vegetables.
4. Chop the sun-dried tomatoes and add them to the mixture.
5. Continue to stir-fry for an additional 3-5 minutes until the trout is heated through.
6. Season with salt and pepper to taste before serving.
