Indian Spiced Salmon with Sweet Potato Mash

Ingredients:
- 2 salmon fillets - 2 large sweet potatoes
- 1 tsp garam masala
- 1 tsp turmeric
- 1/2 tsp salt
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 cup coconut milk
- Fresh cilantro (for garnish)
Instructions:
1. Peel and cube the sweet potatoes. Boil them in salted water for about 15 minutes, or until soft. 2. Meanwhile, season the salmon fillets with garam masala, turmeric, and salt.
3. Heat olive oil in a pan over medium heat and cook the salmon fillets for about 4-5 minutes on each side, until cooked through.
4. Drain the boiled sweet potatoes and mash them in a bowl. Add coconut milk and lemon juice, mixing well.
5. Serve the salmon alongside the sweet potato mash, garnished with fresh cilantro. Enjoy!
