A delicious summer dish combining grilled salmon, crispy asparagus, and a flavorful potato salad. Preparation time is about 40 minutes, and this recipe serves four.Ingredients:
- Salmon:
- 180 g salmon fillet per person
- Lemon salt
- Black pepper
- Oil
- Asparagus:
- 3 asparagus spears per person
- Salt
- Olive oil
- Potato Salad:
- 8 boiled potatoes, diced
- 2 boiled eggs, chopped
- 1 bunch of dill, chopped
- 1 red onion, chopped
- 4 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 garlic clove, crushed
- Black pepper
- Salt
Instructions:
1. Prepare the Salmon:
- Season the salmon fillets with lemon salt about 15 minutes before grilling.
- Brush the fillets with oil and place them skin-side down on a hot grill.
- Cook until the skin is crispy, then move the fish to a cooler side of the grill.
- Season with black pepper, cover, and let cook for another 10 minutes or until the fish is cooked through.
2. Prepare the Asparagus:
- Season the asparagus with salt and olive oil.
- Grill the asparagus quickly on the hottest part of the grill.
3. Prepare the Potato Salad:
- Combine all the salad ingredients in a bowl and mix well.
- Season with salt and pepper to taste. Optionally, you can add shrimp to the salad.
Serve the grilled salmon, crispy asparagus, and potato salad together. Enjoy with a nice white wine!
