A delicious and quick salmon stir-fry that brings together fresh vegetables and flavorful salmon, perfect for a family meal. Preparation Time: 30 minutes

Ingredients:
- 1 kg salmon
- Black pepper
- Salt
- 1 lemon
- Oil (e.g., canola or olive oil)
- 20 cm leek
- 4 carrots
- 2 firm potatoes
- 2 zucchinis
- 2 fish stock cubes
- Water
- Soy sauce
- Sesame oil
Instructions:
1. Cut the salmon into bite-sized pieces and season with black pepper and salt. Squeeze the lemon juice over the salmon.
2. Peel and slice the carrots, potatoes, and zucchinis. Finely chop the leek.
3. Heat oil in a large wok or frying pan. Add the leek and sauté for a moment.
4. Add the carrots and potatoes to the pan and stir-fry for about 5 minutes until they start to soften.
5. Add the zucchinis and salmon pieces to the pan. Cook until the salmon is done.
6. Dissolve the fish stock cubes in water and pour the mixture into the pan. Add soy sauce and sesame oil to taste.
7. Mix all ingredients well and cook for a few more minutes. Serve warm.
