A delicious and creamy salmon soup that warms the heart and body. This recipe is easy to prepare and perfect for both everyday meals and special occasions. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g salmon fillet
- 1 medium onion
- 2 potatoes
- 2 ramps (or regular garlic)
- 1 carrot
- 1 l fish stock
- 2 dl heavy cream
- Salt and pepper to taste
- Fresh dill for garnish
Instructions:
1. Peel and chop the onion, potatoes, carrot, and ramps.
2. Heat a bit of oil in a pot and sauté the onion and ramps until they are soft.
3. Add the chopped potatoes and carrots to the pot, then pour the fish stock over them.
4. Cook the vegetables for about 10 minutes, until they are almost tender.
5. Add the diced salmon fillet and cook for another 5-7 minutes, until the salmon is cooked through.
6. Pour the cream into the soup and stir well. Season with salt and pepper.
7. Let the soup simmer for a few more minutes to allow the flavors to blend.
8. Serve the soup garnished with fresh dill.
