Ingredients:
- 400 g salmon fillet - 1 l fish stock
- 2 dl heavy cream
- 2 potatoes
- 1 onion
- 2 dl carrots (diced)
- 1 dl leek (sliced)
- 1-2 tsp lemon juice
- Salt and pepper to taste
- Fresh dill for garnish
Instructions:
1. Peel and dice the potatoes. Finely chop the onion and slice the leek. 2. Heat the fish stock in a pot and add the onion, carrots, and diced potatoes. Cook for about 10 minutes until the potatoes are nearly tender.
3. Add the salmon fillet in chunks to the soup and cook for an additional 5 minutes.
4. Stir in the heavy cream and leek. Cook for another 5 minutes until all ingredients are cooked through.
5. Season the soup with lemon juice, salt, and pepper. Mix well.
6. Serve the soup garnished with fresh dill and add more lemon juice to the plate if desired.
