A simple and delicious vegetable soup that makes use of any vegetables you have in your fridge. Perfect for warming your heart and stomach! Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 potatoes - 2 carrots
- 1 onion
- 1 zucchini (optional)
- 1 cup chives (optional)
- 4 cups vegetable broth
- 2 tablespoons oil
- Salt and pepper to taste
- Fresh herbs (e.g., parsley) for garnish
Instructions:
1. Peel and chop the potatoes, carrots, and onion into small cubes. 2. Heat the oil in a large pot and sauté the onion until soft.
3. Add the potatoes and carrots to the pot, and sauté for a moment.
4. Pour in the vegetable broth and bring to a boil.
5. Reduce the heat and let the soup simmer for about 15-20 minutes, until the vegetables are tender.
6. Add the chopped zucchini and chives to the soup, and cook for another 5 minutes.
7. Season with salt and pepper to taste.
8. Serve the soup with fresh herbs on top.
