Ingredients:

- 500 g salmon fillet
- 1 tbsp salt
- 1 tbsp sugar
- 1 tbsp black pepper
- 1 tbsp fennel seeds
- 1 tbsp dill
- 1 tbsp smoked paprika

Dill and Chive Sauce:

- 200 g sour cream
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh chives, chopped
- 1 tbsp lemon juice
- Salt and pepper to taste

Instructions:

1. In a bowl, mix together the salt, sugar, black pepper, fennel seeds, dill, and smoked paprika.
2. Rub the spice mixture over the salmon fillet and wrap it in plastic wrap. Allow it to marinate in the refrigerator for at least 1-2 hours or overnight.
3. Preheat the oven to 100°C (212°F). Remove the salmon from the refrigerator and squeeze out any excess moisture.
4. Bake the salmon fillet in the oven for about 30-40 minutes, until cooked through but still moist. Allow to cool.
5. Prepare the sauce by combining all sauce ingredients in a bowl. Season with salt and pepper to taste.
6. Slice the cooled salmon thinly and serve with the dill and chive sauce.
