A classic Finnish dish made with fresh or smoked salmon, Lohilaatikko is a delicious and hearty meal perfect for any occasion. Preparation Time: 1 hour
Serving Size: 4-6 servings
Ingredients:
- 400 g fresh salmon or 200 g smoked salmon
- 4 dl grated potatoes
- 2 dl cream
- 2 dl milk
- 1 onion
- 3 eggs
- Salt and pepper to taste
- Butter for greasing the baking dish
- Fresh dill for garnish (optional)
Instructions:
1. Peel and coarsely grate the potatoes. Rinse and drain well.
2. Finely chop the onion and sauté it in butter until soft.
3. Cut the salmon into small pieces (if using fresh salmon) and mix it with the grated potatoes, sautéed onion, cream, and milk.
4. Add the eggs to the mixture and season with salt and pepper. Mix well.
5. Grease a baking dish with butter and pour the mixture into it.
6. Bake in a preheated oven at 180°C (350°F) for about 40-50 minutes, until the top is golden brown and set.
7. Allow to cool slightly before serving. Garnish with fresh dill if desired.
