A delicious and hearty dish that combines salmon, potatoes, and a creamy sauce. Perfect for a weekday dinner or an impressive dish for special occasions. Preparation time: 1 hour
Serving size: 4-6 servings
Ingredients:
- 2 dl light milk
- 0.25 tsp white pepper
- 1 tsp salt
- 6 pickled beetroot slices
- Oil
- 1 salmon fillet (about 400 g)
- 1 onion
- Fresh dill
- 0.5 tsp allspice
- 2 eggs
- 1000 g potatoes
- 2 dl cooking cream (10% fat)
Instructions:
1. Peel and slice the potatoes into 2-3 mm thick slices, either by hand or using a machine. Rinse the slices quickly in cold water and dry them.
2. Peel and slice the onion.
3. Heat oil in a frying pan and sauté the onion until soft.
4. Cut the salmon fillet into bite-sized pieces and season with salt, white pepper, and allspice.
5. Grease a baking dish. Layer the bottom with potato slices, then add the salmon pieces, followed by the sautéed onion and pickled beetroot.
6. Repeat the layers until all ingredients are used, finishing with a layer of potatoes.
7. In a bowl, mix the light milk, eggs, cooking cream, and dill. Pour the mixture over the potato layers in the baking dish.
8. Bake at 175 °C for about 40-50 minutes, until the potatoes are cooked through and the top is beautifully golden brown.
