Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water until al dente. Drain and reserve some pasta water.2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for a few minutes until softened.
3. Add the minced garlic, bell pepper, and zucchini. Cook for about 5-7 minutes until the vegetables are tender but still crisp.
4. Stir in the cherry tomatoes and spinach. Continue cooking until the spinach is wilted and the tomatoes are slightly softened.
5. Combine the cooked pasta with the vegetables. Mix well and add a little reserved pasta water if needed to make it more moist. Season with salt and pepper.
6. Serve the portions with grated Parmesan cheese on top if desired.
