Ingredients:

- 2 tablespoons oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 can (400 g) chickpeas, rinsed and drained
- 1 can (400 g) crushed tomatoes
- 100 ml coconut milk
- 2 tablespoons curry powder
- Salt and pepper to taste
- Fresh cilantro for garnish

Instructions:

1. Heat the oil in a large skillet over medium heat. Add the onion and sauté until soft.
2. Add the crushed garlic and grated ginger, and cook for another minute.
3. Stir in the diced bell pepper and zucchini, and sauté for about 5 minutes until the vegetables begin to soften.
4. Add the chickpeas, crushed tomatoes, coconut milk, and curry powder. Mix well.
5. Allow the curry to simmer on low heat for about 15 minutes, until the vegetables are fully cooked.
6. Season with salt and pepper. Serve garnished with fresh cilantro.
