Serving Size: 4 servings
Ingredients:
- 200 g green or brown lentils
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 carrot, diced
- 1 red bell pepper, diced
- 1 tsp curry powder
- 1 tsp cumin seeds
- 1 tsp turmeric
- 400 g can of crushed tomatoes
- 400 ml vegetable broth
- Salt and pepper to taste
- Fresh coriander for garnish
- Oil for cooking
Instructions:
1. Heat oil in a large pot over medium heat. Add the chopped onion and sauté until soft.
2. Add the crushed garlic, diced carrot, and bell pepper. Cook for a few minutes.
3. Stir in the curry powder, cumin, and turmeric. Mix well and cook for another minute.
4. Rinse the lentils under cold water and add them to the pot.
5. Pour in the crushed tomatoes and vegetable broth. Stir well and bring to a boil.
6. Reduce the heat and let it simmer for about 20-25 minutes, until the lentils are tender.
7. Season with salt and pepper. Serve warm, garnished with fresh coriander.
