A delicious and rich dish perfect for everyday meals or special occasions. Preparation time is about 30 minutes and it serves 4.Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 200 g fresh mushrooms (e.g., button mushrooms or chanterelles)
- 1 small onion
- 2 garlic cloves
- 2 dl heavy cream
- 1 dl vegetable broth
- 50 g Parmesan cheese (grated)
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve some pasta water.
2. Chop the onion and garlic. Slice the mushrooms.
3. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, sauté for about 2-3 minutes.
4. Add the mushrooms to the skillet and cook until they are golden brown and the moisture has evaporated, about 5-7 minutes.
5. Pour in the heavy cream and vegetable broth. Let it simmer on low heat for a few minutes.
6. Add the cooked pasta to the skillet and mix well. If the sauce is too thick, add a little pasta water as needed.
7. Stir in the grated Parmesan cheese and season with salt and black pepper.
8. Serve the dishes garnished with fresh parsley.
