Coconut Lentils with Bacon

A quick and easy weeknight meal combining red lentils, coconut milk, and crispy bacon. Perfect for busy evenings! Preparation time: 15 minutes
Serving size: 2-3 servings
Ingredients:
- 1 package of pre-cooked red lentils - 1 can of coconut milk
- 100 g bacon
- 1 onion
- 2 garlic cloves
- 1-2 chilies (to taste)
- Salt and pepper to taste
- Fresh cilantro (optional)
Instructions:
1. Peel and chop the onion and garlic. Finely chop the chilies if using.2. Heat a frying pan over medium heat and cook the bacon until crispy. Remove the bacon from the pan and set aside.
3. Add the chopped onion and garlic to the pan, sauté until soft and slightly golden.
4. Add the chopped chilies to the pan and cook for another minute.
5. Pour in the coconut milk and add the red lentils. Season with salt and pepper.
6. Let the mixture simmer on low heat for about 5-7 minutes until the lentils are warmed through and flavors are combined.
7. Stir in the cooked bacon just before serving. Garnish with fresh cilantro if desired.
