Ingredients:
Coconut Yogurt:
- 1 packet Creamed Coconut (Biona)
- 300 ml almond milk
- 1 tablespoon honey or 5 drops of vanilla stevia
Apple Compote:
- 3-4 apples
- 1 tablespoon sugar (optional)
- 1 teaspoon cinnamon
- 100 ml water
Instructions:
1. Start with the coconut yogurt. Melt the creamed coconut using a double boiler or microwave.
2. Mix the melted coconut with almond milk and add honey or vanilla stevia. Stir well.
3. Pour the mixture into a container and refrigerate for about 1-2 hours to set.
4. Prepare the apple compote by peeling and chopping the apples into small pieces.
5. Place the apple pieces in a pot, add sugar, cinnamon, and water. Heat over medium heat.
6. Cook the apples for about 10-15 minutes until they are soft but still hold their shape.
7. Allow the apple compote to cool slightly before serving.
8. Serve the coconut yogurt topped with the apple compote.
