A delicious and warming lentil pumpkin chili that combines sweet pumpkin, hearty lentils, and spicy seasonings. Perfect for fall! Preparation Time: 40 minutes
Serving Size: 4 servings
Ingredients:
- 1 medium pumpkin (about 600 g), diced- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 can (400 g) crushed tomatoes
- 1 can (400 g) white lentils, rinsed
- 1 tablespoon olive oil
- 1 tablespoon chili powder (or to taste)
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups water
- Fresh cilantro (for garnish)
Instructions:
1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.2. Add diced pumpkin and bell peppers, cook for about 5-7 minutes until they start to soften.
3. Stir in crushed tomatoes, lentils, chili powder, cumin, salt, black pepper, and water. Mix well.
4. Bring the mixture to a boil, then reduce the heat and let simmer covered for about 20-25 minutes until the pumpkin is fully cooked.
5. Serve warm, garnished with fresh cilantro.
