Ingredients:
- 300 g pasta (e.g., penne or spaghetti) - 200 g fresh mushrooms (e.g., chanterelles or button mushrooms)
- 1 small onion
- 2 garlic cloves
- 200 ml heavy cream
- 50 g Parmesan cheese (grated)
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain it and reserve a bit of the cooking water. 2. Peel and finely chop the onion and garlic. Clean and slice the mushrooms.
3. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing for about 2-3 minutes.
4. Add the mushrooms to the skillet and cook until golden brown and the moisture has evaporated, about 5-7 minutes.
5. Pour the cream into the mushroom mixture and let it simmer for about 2-3 minutes. Season with salt and pepper.
6. Add the cooked pasta and Parmesan cheese to the skillet. Mix well and add a bit of the reserved cooking water if the mixture seems too thick.
7. Garnish with fresh parsley and serve immediately.
