A delicious Greek-inspired meatball dish featuring eggplant and feta cheese.
Preparation Time: 1 hour
Serving Size: 4 servings
Ingredients:
- 1 eggplant
- Feta cheese
- 800 g ground meat
- 2 dl beef broth, cream, milk, or sour cream
- 1 egg
- 1 onion
- 1 dl breadcrumbs
- A few garlic cloves
- Salt
Instructions:
1. Rinse and grate the eggplant. Sprinkle salt over the grated eggplant, mix well, and let it sit for about half an hour. Drain excess liquid.
2. Soak the breadcrumbs in beef broth, cream, milk, or sour cream for about 10 minutes.
3. Chop the onion and garlic cloves.
4. In a bowl, combine the ground meat, eggplant, soaked breadcrumbs, egg, chopped onion, and garlic. Season with salt.
5. Shape the mixture into meatballs.
6. Cook the meatballs in a frying pan or bake them in the oven until they are golden brown and cooked through.
7. Serve the meatballs with feta cheese and enjoy!
