A traditional Finnish meat pie filled with game meat and mushrooms. Preparation time: 2 hours
Serving size: 8 pies
Ingredients:
- 500-600 g all-purpose flour
- 3 dl milk
- 0.5 dl water
- 100 g butter
- 50 g yeast
- 1 tsp salt
- 400 g game minced meat
- 1 dl barley groats
- 100 g forest mushrooms
- 1 onion
- 1 dl game broth
- 2 tbsp sour cream
- 1 tsp thyme
- Salt to taste
- Pepper to taste
- 1 egg for brushing
Instructions:
1. Dissolve the yeast in lukewarm water. Add milk, melted butter, and salt. Mix well.
2. Gradually add flour and knead the dough until elastic. Cover the bowl and let it rise in a warm place for about an hour.
3. Prepare the filling: Sauté the onion in butter, add the game minced meat, and cook until browned. Stir in barley groats, forest mushrooms, game broth, sour cream, thyme, salt, and pepper. Mix and taste for seasoning.
4. Roll out the dough into a thin sheet, add filling, and fold the dough over the filling. Cut the pies into half-moon shapes.
5. Brush the pies with beaten egg and prick lightly with a fork.
6. Bake at 225°C (437°F) for 10-15 minutes until the pies are golden brown.
7. Serve warm.
