Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 200 g fresh spinach
- 200 ml cream
- 100 g grated Parmesan cheese
- 2 garlic cloves
- 2 tablespoons olive oil
- Salt and pepper to taste
- (Optional: pine nuts or other nuts for garnish)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain, reserving a bit of the pasta cooking water.
2. Peel and finely chop the garlic cloves. Heat olive oil in a pan and add the garlic. Sauté for a few minutes until fragrant.
3. Add the fresh spinach to the pan and cook until wilted.
4. Pour in the cream and stir well. Let it simmer on low heat for about 5 minutes.
5. Add the grated Parmesan cheese and stir until melted. Season with salt and pepper.
6. Mix the cooked pasta into the spinach sauce. If the sauce is too thick, add a little reserved pasta cooking water.
7. Serve immediately, garnished with pine nuts or other nuts if desired.
