A delicious meat and vegetable stew perfect for cold days, full of flavor and nutrients. Preparation Time: 1 hour
Serving Size: 4 servings
Ingredients:
- 500 g beef, cut into stew pieces
- 200 g carrots, sliced
- 200 g rutabaga, sliced
- 200 g onions, chopped
- 5 dl tomato juice
- 5 whole allspice berries
- 5 whole black peppercorns
- 1½-2 tsp salt
- 1 tsp basil
- 4 tsp margarine
Instructions:
1. Peel and slice the onions and carrots.
2. Peel the rutabaga and cut it into thin slices.
3. Cut the beef into smaller pieces if necessary.
4. Heat margarine in a large pot and add the beef. Sauté until browned.
5. Add the onions, carrots, and rutabaga to the pot. Mix well.
6. Pour in the tomato juice and season with salt, basil, allspice, and black pepper.
7. Let the stew simmer on low heat with the lid on for about 40-50 minutes, until the meat is tender and the vegetables are cooked.
8. Serve warm with mashed potatoes or bread.
