Ingredients:

- 400 g vendace
- 200 g freekeh grain
- 1 onion
- 2 garlic cloves
- 1 bell pepper (e.g., red or yellow)
- 1 cucumber
- 1 lemon
- 4 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- Fresh herbs (e.g., parsley or dill)

Instructions:

1. Rinse the freekeh grain under cold water and cook according to the package instructions, usually about 20 minutes. Drain and set aside.
2. Peel and finely chop the onion and garlic cloves. Peel and dice the bell pepper.
3. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the onion and garlic, sautéing until soft.
4. Add the bell pepper to the skillet and cook for a few minutes until softened.
5. Stir the cooked freekeh into the skillet and mix well. Season with salt and black pepper.
6. In another pan, heat the remaining olive oil and fry the vendace for about 3-4 minutes on each side until golden brown.
7. Squeeze the lemon juice over the fried vendace and add fresh herbs if desired.
8. Serve the vendace with freekeh pilaf, garnished with fresh herbs and cucumber slices.
