Freekeh Salad

A delicious and nutritious side dish that complements lamb or other proteins. This salad is easy to make and packed with flavor. Preparation Time: 30 minutes
Serving Size: 4
Ingredients:
- 200 g freekeh - 1 liter water
- 1 cucumber
- 1 red bell pepper
- 1 yellow onion
- 200 g cherry tomatoes
- 100 g feta cheese
- 1 dl fresh parsley
- 1 dl fresh mint
- 2 tbsp olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions:
1. Rinse the freekeh under cold water and place it in a pot with the water. Cook over low heat for about 20 minutes, until tender but still slightly chewy.2. Drain the freekeh and let it cool.
3. Chop the cucumber, bell pepper, onion, and cherry tomatoes into small pieces.
4. Crumble the feta cheese and finely chop the parsley and mint.
5. In a large bowl, combine the freekeh, vegetables, feta cheese, parsley, and mint.
6. Add the olive oil, lemon juice, salt, and pepper. Mix well.
7. Allow the salad to chill in the refrigerator for about 10 minutes before serving.
