Ingredients:
- 1 whole chicken (about 4 pounds)
- 3 lemons (2 halved, 1 zested and juiced)
- 6 cloves of garlic, minced
- 4 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Fresh herbs (optional, for garnish)
Instructions:
1. Preheat your oven to 425°F (220°C).
2. In a small bowl, mix the olive oil, lemon juice, lemon zest, minced garlic, salt, pepper, thyme, and rosemary to create a marinade.
3. Pat the chicken dry with paper towels and place it in a roasting pan.
4. Rub the marinade all over the chicken, making sure to get under the skin and inside the cavity.
5. Place the halved lemons inside the cavity of the chicken.
6. Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown and crispy.
7. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
8. Garnish with fresh herbs if desired and serve with your favorite side dishes.
