Serving Size: 4 servings
Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 4 cloves garlic, minced
- 2 lemons, juiced and zested
- 1/4 cup olive oil
- 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
Instructions:
1. In a bowl, mix minced garlic, lemon juice, lemon zest, olive oil, rosemary, salt, pepper, and paprika to create a marinade.
2. Pat the chicken dry with paper towels.
3. Rub the marinade all over the chicken, making sure to get under the skin and inside the cavity.
4. Place the chicken in a large zip-top bag or a dish and refrigerate for at least 1 hour, preferably overnight.
5. Preheat the oven to 425°F (220°C).
6. Place the marinated chicken in a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
7. Let the chicken rest for 10-15 minutes before carving. Serve warm with your choice of sides.
