Ingredients:
- 1 whole chicken (about 4-5 lbs) - 4 cloves garlic, minced
- 2 lemons (juiced and zested)
- 1/4 cup olive oil
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
- Salt and pepper to taste
Instructions:
1. In a bowl, mix together minced garlic, lemon juice, lemon zest, olive oil, rosemary, thyme, salt, and pepper to create the marinade. 2. Place the chicken in a large resealable bag or a dish and pour the marinade over it. Ensure the chicken is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
3. Preheat the oven to 425°F (220°C).
4. Remove the chicken from the marinade and place it in a roasting pan. Discard the marinade.
5. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
6. Let the chicken rest for 10 minutes before carving. Serve with your favorite sides.
