Ingredients:
- 1 whole chicken (about 4 pounds)
- 4 cloves garlic, minced
- 2 lemons, zested and juiced
- 4 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Fresh parsley for garnish (optional)
Instructions:
1. In a bowl, combine minced garlic, lemon zest, lemon juice, olive oil, salt, pepper, thyme, and rosemary. Mix well to create a marinade.
2. Pat the chicken dry with paper towels. Rub the marinade all over the chicken, including under the skin.
3. Place the chicken in a zip-top bag or a dish and let it marinate in the refrigerator for at least 1 hour, or overnight for best flavor.
4. Preheat the oven to 425°F (220°C).
5. Remove the chicken from the marinade and place it in a roasting pan.
6. Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
7. Let the chicken rest for 10 minutes before carving. Garnish with fresh parsley if desired.
8. Serve warm with your favorite sides.
