Ingredients:
- 1 whole chicken (about 4-5 pounds)
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 2 lemons (one juiced, one sliced)
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Fresh parsley for garnish
Instructions:
1. Preheat your oven to 425°F (220°C).
2. In a small bowl, mix the olive oil, minced garlic, lemon juice, salt, pepper, thyme, and rosemary to create a marinade.
3. Pat the chicken dry with paper towels and place it in a roasting pan.
4. Rub the marinade all over the chicken, making sure to get under the skin for maximum flavor.
5. Place the lemon slices inside the cavity of the chicken.
6. Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
7. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
8. Garnish with fresh parsley and serve with your favorite sides.
