Ingredients:
- 1 whole chicken (about 4-5 lbs) - 4 cloves garlic, minced
- 2 lemons (one sliced, one juiced)
- 1/4 cup olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- Fresh parsley for garnish
Instructions:
1. Preheat the oven to 400°F (200°C). 2. In a small bowl, mix olive oil, minced garlic, lemon juice, salt, pepper, and thyme to create a marinade.
3. Pat the chicken dry with paper towels and place it in a roasting pan.
4. Rub the marinade all over the chicken, including under the skin and inside the cavity.
5. Stuff the cavity with lemon slices and any leftover garlic.
6. Place the chicken in the oven and roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
7. Let the chicken rest for 10 minutes before carving.
8. Garnish with fresh parsley and serve with your favorite sides.
