Serving Size: 4 servings
Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 4 cloves garlic, minced
- 2 lemons (1 juiced, 1 sliced)
- 1/4 cup olive oil
- 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
Instructions:
1. In a bowl, combine olive oil, minced garlic, lemon juice, rosemary, salt, pepper, and paprika to create a marinade.
2. Rub the marinade all over the chicken, including under the skin. Place lemon slices inside the cavity of the chicken.
3. Cover the chicken and marinate in the refrigerator for at least 1 hour, or overnight for best flavors.
4. Preheat the oven to 425°F (220°C).
5. Place the marinated chicken in a roasting pan, breast side up.
6. Roast in the oven for about 1 hour or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
7. Let the chicken rest for 10 minutes before carving. Serve warm.
