Ingredients:
- 4 boneless, skinless chicken breasts
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Juice of 2 lemons
- Zest of 1 lemon
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. In a bowl, mix together the olive oil, minced garlic, lemon juice, lemon zest, oregano, thyme, salt, and pepper to create a marinade.
2. Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish, then refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
3. Preheat your grill or skillet over medium-high heat.
4. Remove the chicken from the marinade and discard the leftover marinade.
5. Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
6. Once cooked, remove from heat and let it rest for a few minutes.
7. Garnish with chopped fresh parsley before serving.
