This delicious and refreshing pasta salad is a perfect side dish or a lighter main course. It comes together quickly and is great for both everyday meals and special occasions. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 250 g pasta (e.g., penne or fusilli)
- 1 dl cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 100 g feta cheese, crumbled
- 1/4 dl olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and rinse with cold water.
2. In a bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, and feta cheese.
3. Prepare the dressing by mixing olive oil, balsamic vinegar, salt, and pepper. Pour the dressing over the salad and toss well.
4. Let the salad chill in the refrigerator for about 10 minutes before serving.
5. Garnish with fresh basil before serving.
