A delicious lemon cheesecake made with a protein bar that is perfect for satisfying your sweet tooth without extra calories. Preparation Time: 30 minutes + 2 hours chilling
Serving Size: 8 servings
Ingredients:
- 1 protein bar (e.g., lemon-flavored)- 200 g cream cheese
- 2 tablespoons honey
- 1 dl whipped cream
- Juice and zest of 1 lemon
- 1 dl crushed digestive biscuits
- 50 g butter (melted)
Instructions:
1. Crumble the protein bar into small pieces.2. Mix the crushed biscuits and melted butter together. Press the mixture firmly into the bottom of a springform pan.
3. In a bowl, beat the cream cheese and honey together until smooth.
4. Add the lemon juice and zest to the cream cheese mixture and mix well.
5. Whip the cream until soft peaks form and gently fold it into the cream cheese mixture.
6. Finally, fold the crumbled protein bar into the mixture.
7. Pour the mixture over the biscuit base and smooth the top.
8. Allow the cheesecake to chill in the refrigerator for at least 2 hours before serving.
