Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 50 g parmesan cheese, grated (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for about 2-3 minutes.
3. Add bell pepper and zucchini to the skillet. Cook for about 5-7 minutes until the vegetables soften.
4. Stir in cherry tomatoes, spinach, salt, black pepper, and oregano. Cook for another 2-3 minutes until the spinach wilts.
5. Combine the cooked pasta with the vegetable mixture. Add a little reserved cooking water if needed to achieve the desired consistency.
6. Serve each portion with grated parmesan cheese, if using.
