Ingredients:

- 12 mini peppers
- 1 cup couscous
- 1 ½ cups water
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup finely chopped fresh parsley
- ¼ cup grated Parmesan cheese (optional)

Instructions:

1. Preheat the oven to 200°C (400°F).
2. In a saucepan, bring water to a boil and stir in couscous, salt, and olive oil. Mix and remove from heat. Let the couscous sit for about 5 minutes to absorb the water.
3. After the couscous has absorbed the water, add black pepper, parsley, and Parmesan cheese. Mix well.
4. Carefully cut off the tops of the mini peppers and remove the seeds.
5. Fill the peppers with the couscous mixture.
6. Place the stuffed peppers in a baking dish and bake in the oven for about 15-20 minutes, until the peppers are tender and the couscous is golden brown on top.
7. Serve warm as an appetizer.
