Delicious warm appetizers featuring mini peppers stuffed with a flavorful couscous mixture. Perfect for parties or gatherings.

Serving Size: 4-6 people
Ingredients:
- 12 mini peppers
- 1 cup couscous
- 1 ½ cups water
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup chopped fresh parsley
- ¼ cup grated Parmesan cheese (optional)
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Bring water to a boil in a saucepan, then add couscous, olive oil, salt, and black pepper. Stir well and cover, allowing to steam for about 5 minutes.
3. Chop the parsley and mix it into the couscous. If using, add the Parmesan cheese as well.
4. Cut the tops off the mini peppers and carefully remove the seeds.
5. Stuff the peppers with the couscous mixture and place them in a baking dish.
6. Bake the peppers in the oven for about 15-20 minutes, until they are tender and slightly roasted.
7. Serve warm.
