A delicious and healthy dessert that combines sweet apples, vanilla cashew cream, and berry jam. This vegan and gluten-free alternative to traditional Laskiaispullat is both visually appealing and tasty.
Preparation Time: approx. 40 min (+ drying time 2 - 4 hours)

Ingredients

For the Apples:
- 1 apple per person
For the Marinade:
- Juice of 1/2 lemon
- 1 tbsp maple syrup
- 1/2 tsp cinnamon
- 1/2 tsp cardamom
- 1/8 tsp quality salt
For the Vanilla Cashew Cream:
- 2.5 dl soaked cashew nuts
- 1 dl water
- 1 - 2 tbsp honey or agave syrup
- Seeds from 1/2 vanilla bean
- 4 tbsp melted coconut butter or oil
- A pinch of quality salt
For the Red Jam:
- 1 dl pitted fresh dates
- 2 dl raspberries or cherries
- About 1 dl water
- 1 tbsp chia seeds
For the Coconut Topping:
- 1/4 dl coconut oil
- 1/4 dl coconut butter
- 2 tsp honey or agave syrup
- A pinch of quality salt

Instructions

1. Peel the apple, remove the core, and cut it in half. Mix the marinade ingredients together and brush the apples with the mixture.
2. Dry the apples in a dehydrator at 40°C for 2 - 4 hours or lightly bake in the oven at 100°C for about 10 minutes.
3. Prepare the cashew cream: Blend the soaked cashew nuts and water until fluffy. Add the remaining ingredients and mix well. Transfer to the fridge to set.
4. Prepare the red jam: Blend the berries and dates with water until jam-like consistency. Stir in the chia seeds and let thicken for a moment.
5. Prepare the coconut topping: Melt the coconut oil and butter in a water bath, then mix in the honey and salt.
6. Fill the apple halves with red jam and cashew cream, then place the topped half on top.
7. Serve immediately or store in the fridge.
