Ingredients:
- 400 g chicken fillet
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp garlic powder
- 200 g broccoli
- 150 g cherry tomatoes
- 200 g potatoes
- 100 g grated Parmesan cheese
- Fresh herbs for garnish
Instructions:
1. Peel and dice the potatoes into cubes. Boil in salted water for about 10 minutes until tender.
2. Meanwhile, cut the chicken fillet into bite-sized pieces and season with salt, pepper, paprika, and garlic powder.
3. Heat the olive oil in a frying pan over medium heat. Add the chicken pieces and cook until golden brown and cooked through, about 7-10 minutes.
4. Add the chopped broccoli and cherry tomatoes to the pan. Sauté for an additional 5 minutes until the vegetables are cooked but still crisp.
5. Drain the cooked potatoes and mix them into the chicken and vegetable mixture. Stir in the grated Parmesan cheese until well combined.
6. Serve warm, garnished with fresh herbs.
