A hearty and flavorful tofu vegetable soup perfect for a cozy meal.

Serving Size: 4 servings
Ingredients:
- 400 g tofu
- 1 liter vegetable broth
- 2 carrots
- 1 zucchini
- 1 red onion
- 2 garlic cloves
- 1 tsp curry powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions:
1. Peel and chop the carrots and red onion.
2. Heat the olive oil in a large pot over medium heat.
3. Add the chopped carrots and red onion to the pot and sauté for about 5 minutes.
4. Add the minced garlic and curry powder, stirring well to combine.
5. Chop the zucchini and add it to the pot.
6. Pour in the vegetable broth and bring the soup to a boil. Let it simmer for 10-15 minutes, or until the vegetables are tender.
7. Cut the tofu into cubes and add it to the soup. Allow it to simmer for an additional 5 minutes.
8. Season with salt and black pepper to taste.
9. Serve the soup garnished with fresh parsley.
