Serving Size: 4 servings
Ingredients:
- 400 g chicken fillets- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bell pepper
- 1 zucchini
- 1 red onion
- 200 g cherry tomatoes
- 1 teaspoon dried oregano
- 150 g couscous
- 2.5 dl water
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a frying pan over medium heat.2. Season the chicken fillets with salt and black pepper. Cook the chicken in the pan for about 5-7 minutes on each side, until cooked through. Remove from the pan and let rest.
3. Chop the bell pepper, zucchini, and red onion. Add the vegetables to the pan and sauté for about 5 minutes, until softened.
4. Add the cherry tomatoes and oregano to the pan and cook for an additional 2 minutes.
5. Cook the couscous in water according to package instructions.
6. Slice the chicken fillets and serve them with the vegetables and couscous. Garnish with fresh parsley.
