Lähileipä is a delicious bread made from 100% Finnish grains, perfect as an accompaniment to meals or as a snack. This recipe showcases the best flavors of local ingredients.
Preparation Time: 3 hours (including rising)
Serving Size: 1 loaf

Ingredients:

- 500 g Lähileipä flour
- 300 ml water
- 10 g salt
- 10 g fresh yeast
- 1 tbsp honey (optional)
- 2 tbsp olive oil

Instructions:

1. Dissolve the yeast and honey (if using) in warm water.
2. Mix the salt into the flour in a large bowl.
3. Pour the yeast mixture into the flour and add olive oil.
4. Knead the dough by hand or with a mixer for about 10 minutes until smooth and elastic.
5. Allow the dough to rise, covered, in a warm place for about 1-1.5 hours until doubled in size.
6. Shape the dough into a loaf and transfer it to a baking sheet lined with parchment paper.
7. Let the loaf rise again for about 30 minutes.
8. Preheat the oven to 220 degrees Celsius (428 degrees Fahrenheit).
9. Make slashes on the top of the loaf and bake in the oven for about 25-30 minutes until golden brown and it sounds hollow when tapped.
10. Allow the bread to cool on a rack before slicing.
