A traditional Finnish rutabaga casserole, perfect for festive occasions. Preparation time: 2 hours
Serving size: 6-8 servings
Ingredients:
- 1 vegetable broth cube
- 3 kg rutabagas
- 2 tbsp salt
- 1.5 dl syrup
- Approximately 1 dl barley flakes
- 1 tsp ginger
- 1 tsp white pepper
- 1 tsp paprika
- Approximately 100 g butter
- 2.5 dl cream
- 3 l water
- 3 eggs
- 1 l red milk
- 1 tsp nutmeg
Instructions:
1. Peel the rutabagas and remove the white parts.
2. Boil the rutabagas in water until soft, adding the vegetable broth cube to the cooking water.
3. Drain the rutabagas and mash them until smooth.
4. To the mashed rutabagas, add salt, syrup, barley flakes, ginger, white pepper, paprika, butter, cream, eggs, red milk, and nutmeg. Mix well.
5. Pour the mixture into a greased baking dish.
6. Bake in a preheated oven at 175°C (350°F) for about 1.5 hours or until the top is beautifully golden brown.
7. Let it rest for a moment before serving.
