A traditional Finnish rutabaga casserole that's creamy, sweet, and perfect for festive occasions.
Preparation time: 1 hour
Serving size: 6-8 servings
Ingredients:
- 1 kg rutabaga
- 1/2 l water
- 1 1/2 tsp salt
- 1 dl breadcrumbs
- 2 dl heavy cream
- 1 egg
- 3 tbsp syrup
- 1/4 tsp ginger
- 1/4 tsp white pepper
- Butter for greasing
- Additional breadcrumbs for topping
Instructions:
1. Peel and chop the rutabaga into chunks.
2. Boil the rutabaga in salted water until tender. Reserve some of the cooking water.
3. Mash the rutabaga until smooth.
4. Mix in the cream, egg, syrup, ginger, and white pepper. Blend well.
5. If the mixture is too thick, add a little of the reserved cooking water.
6. Grease a baking dish with butter and pour the rutabaga mixture into it.
7. Sprinkle breadcrumbs on top.
8. Bake in a preheated oven at 175°C (350°F) for about 45-60 minutes, until the top is golden brown.
9. Allow to rest for a little while before serving.
