Ingredients:

- 1.5 kg lamb roast
- 4 garlic cloves
- 2 tbsp fresh rosemary
- 2 tbsp fresh thyme
- 2 tbsp olive oil
- Salt and pepper to taste
- 100 ml red wine (optional)

Instructions:

1. Preheat the oven to 180°C (350°F).
2. Mince the garlic and mix it with rosemary, thyme, olive oil, salt, and pepper.
3. Rub the seasoning mixture over the surface of the lamb roast.
4. Place the lamb in a roasting pan and pour the red wine into the pan if using.
5. Roast in the oven for about 1.5 hours or until the internal temperature reaches about 70°C (160°F).
6. Let the roast rest for about 10-15 minutes before slicing.
7. Serve with potatoes and vegetables.
